This indirect heat method gently roasts the stack of meat coated in plain Greek yogurt and Extra Virgin Olive Oil without burning the bottom onion half or drying out the layers you so carefully flattened with your meat mallet. Once it finishes roasting on the grill in your medium mixing bowl marinade, verify it has reached 165°F with a food thermometer. Then, you are ready to slice it up and serve it in fresh Turkish bread.
