Greek Salad
I can hardly wait for summer when my garden is full of fresh sweet tomatoes and juicy cucumbers, but I have found that Greek Salad is just as essential during the winter months. Even when vegetables may not be in their absolute prime, it is vital to keep eating fresh salads to enjoy those vibrant flavors and necessary vitamins throughout the colder season. This refreshing dish combines diced tomatoes, cucumber, yellow bell pepper, red onion, and kalamata olives, all tossed in a light dressing of extra virgin olive oil, lemon, and balsamic vinegar, then topped with crumbled feta cheese and fresh herbs.
