I am so excited to share this incredible comfort food with you. Making an Easy Quesadilla is perfect for a quick weeknight meal or a fun gathering with friends. This simple recipe lets you create endless variations, all starting with a few basic ingredients like large flour tortillas and a bit of frying oil. I personally prefer to use a finely shredded Mexican cheese mixture because it melts beautifully during the pan frying process in your large fry pan. You can easily add an optional protein like chicken bites or tofu bites, and you can even serve it alongside wonderful dips like sour cream and guacamole. I love using a large turner to gently fold and flip the quesadilla to crispy perfection. You can add a dash of hot sauce inside as a modification that is not part of the recipe, but I assure you this meal is absolutely fantastic just the way it is written.

Preparing the Flour Tortillas and Basic Ingredients

The foundation of any great Easy Quesadilla begins with the preparation of your basic ingredients. Before you even turn on the stove for pan frying, you need to gather your 6 large flour tortillas and 6 tablespoons of frying oil, adjusting the oil if needed depending on your pan. Next, you need 3 cups of shredded cheese. While you can use any kind of cheese you have available, I prefer to use a finely shredded Mexican cheese mixture to achieve the perfect melt and flavor. Optionally, you can double or triple the amount of cheese if you are looking for a simple quesadilla with just cheese. Having these ingredients ready on your cutting board makes the cooking process smooth and enjoyable.

Selecting Your Optional Protein and Vegetables

One of the best parts about making this Easy Quesadilla is customizing the filling. If you want a heartier meal, you can choose an optional protein. I love using chicken-chorizo bites, but you can also use store-bought or homemade chicken bites, spicy pork bites, beef bites, tofu bites, or salmon bites. You can also use canned, drained black beans without reserving the liquid, or substitute them for cooked red beans. For a vibrant touch, you can prepare optional vegetables by dicing tomatoes, or peeling and finely chopping red onions. Using spring onions or chives is another great choice before we move on to the pan frying stage in the large fry pan.

The Pan Frying Process in a Large Fry Pan

Once your ingredients are prepped, it is time to start pan frying. You can work one by one or use multiple pans at the same time if you are cooking for a group. You need to preheat a large fry pan, sauté pan, or crepe maker on medium-high heat with 1 tablespoon of frying oil. Once the oil is hot, lay down 1 of the flour tortillas flat in the pan. While it is pan frying, you will evenly sprinkle half a cup of your chosen cheese, which is roughly one sixth of the total amount, over the entire top surface of the tortilla. This even layer of the Mexican cheese mixture is essential to hold everything together.

Folding and Pressing with a Large Turner

After your cheese is spread out in the large fry pan, you add one sixth of your optional additional filling directly to the center of the tortilla. Immediately fold the Easy Quesadilla in half and press down gently with a large turner. Pressing with the large turner evenly distributes the ingredients inside and ensures the cheese binds the flour tortillas together. You will let it continue pan frying until the bottom part turns slightly crispy, which takes about 1 to 2 minutes. Then, carefully turn the quesadilla using the large turner, lightly press it again, and pan fry until the other part gets slightly crispy as well for another 1 to 2 minutes.

Plating and Serving with Sour Cream and Guacamole

Once both sides are perfectly golden and slightly crispy, remove the Easy Quesadilla from the large fry pan and repeat the exact same process with the remaining flour tortillas, frying oil, Mexican cheese mixture, and optional protein. When it comes to plating and serving, you will want to use your chef’s knife to cut each quesadilla into 4 triangles so that each serving includes 4 to 6 triangles. To finish this ultimate comfort food meal, you can put inside or serve as a side a variety of delicious toppings. I highly recommend serving these triangles with plenty of sour cream, homemade guacamole, warm queso, fresh salsa, or vibrant chimichurri.
