Proper Orange Preparation

The foundation of a great Czech Mulled Wine Svarak starts with how you handle the fruit. In this Svarak recipe, the orange plays a crucial role in flavoring the red wine cocktail. It is essential to thoroughly rinse the orange first to ensure cleanliness. I recommend cutting the orange into halves or, even better, into 6 to 8 sections while leaving the peel on. The peel contains oils that release a wonderful fragrance into this warm winter drink as it cooks.

Studding the Fruit with Cloves

One of the unique steps in this mulled wine preparation is how we incorporate the spices directly into the fruit. You will need to take your 20 pieces of whole cloves and poke a few of them into each orange section you prepared earlier. This technique prevents the cloves from floating loosely and getting lost, while ensuring that the flavor infuses perfectly into the Czech Christmas drink. It creates a beautiful visual presentation and ensures the cloves and cinnamon notes are balanced.

Building the Liquid Base

To create the body of this holiday beverage, we combine specific liquids and sweeteners. In a small saucepan on medium-high heat, place your prepared orange sections along with one bottle of red wine of your choice (about 750ml), 2 cups of water, and ½ cup of granulated sugar. This mixture creates a balanced base that isn’t too overpowering, making it a delightful red wine cocktail for any occasion.

The Spice Infusion

Aside from the cloves, the aromatic spices are what define the character of Czech Mulled Wine Svarak. To the saucepan, you must add 6 pieces of whole allspice, 3 whole cinnamon sticks, and 6 pieces of whole star anise. This combination of star anise drink components creates a complex flavor profile. Cover the pan with a lid and bring it to a simmer or light boil to wake up these spices.

The Simmering Process

Patience is key during this mulled wine preparation. Once the mixture reaches a simmer, reduce the heat to medium. You must cook it with the lid on, stirring occasionally, for 15 to 20 minutes. This slow process allows the aromatic spices to meld with the wine and sugar, deepening the flavor of your Czech Christmas drink without burning off all the alcohol or liquid.

Managing Evaporation

While preparing this warm winter drink, it is important to keep an eye on the liquid levels. As I note in the recipe, if the water evaporates too much during the simmering process, you should consider adding more water.
