Most Czech tins begin here, with a rolled, sandwiched cookie — and neither of tonight's two is Czech by birth. Linz tarts came from Linz: tender, buttery, scented with lemon and vanilla, and sandwiched with preserve. Ischel's cookies are named for Bad Ischl, the Austrian spa town where the Habsburgs spent their summers, and they are the serious ones — almonds ground from scratch, a whisper of cinnamon, raspberry preserve in the middle and the tops dipped in chocolate. In Tom's own words: "It is a little more work than a regular cookie, but it is totally worth it."
This is the class that teaches you to handle a short dough with confidence, and it fixes the mistake that ruins more Christmas cookies than any other: a cookie comes out of the oven soft, gets mistaken for underbaked, and goes back in. Watching Tom live, you will see what properly baked actually looks like, so you stop guessing. And the dough you make tonight comes back later in the series as the base of the May beetle.
