The Gentle and Flavorful Fish Marinade
To season the fresh salmon, I prepare a simple yet flavorful brushing mixture, or marinade. In a medium mixing bowl, I combine 2 tablespoons of white rice vinegar , 2 tablespoons of extra virgin olive oil , 1 tablespoon of toasted sesame oil , 2 teaspoons of soy sauce , ½ teaspoon of ground ginger , and ÂĽ teaspoon each of salt and pepper. After stirring this mixture until it’s fully combined, I prepare the fish. First, I make sure the filet is rinsed in cold water , then I cut it into thin slices or dice about ½ to Âľ inch in size. I then generously brush the fish with the marinade. I find that brushing is a gentler method that keeps the delicate fish pieces intact. However, you can also place the fish slices into the bowl with the mixture and gently stir with a silicone spatula if you prefer. I then set the fish aside to marinate at room temperature while I prepare the other components.
